DISCLAIMER: I can’t take pretty picture of the food I make.One day I might learn how to take pictures of gorgeous food and then I can check that off my bucket list. That being said, let me start off by saying how much I LOVED this cookbook!

Until I had received The Skinnytaste Cookbook I had never even heard of Gina Homolka and her blog.  I am so glad I have found her now! The first time I went through it I took out my little post it note markers and ended up with about 25-30 hanging out just from the first look through!

This cookbook is so versatile. Homolka labels everything from gluten free, quick, vegetarian, slow cooker and freezer friendly. The pictures are gorgeous and I love how there is nutritional value with every recipe. Homolka even tells you how to tweak certain recipes to make them gluten free.

It was so easy to make. Now hers turned out thicker while mine ended up being more like a soup. Either way it is AMAZING. I was skeptical since there wasn’t much prep or going to in it. But the flavors were awesome.

As you can tell I have an avocado addiction, but the toppings for this are many. What was amazing is that Puppy kept asking for more. He had it for lunch the next day too. Usually though he just ate his with tortilla chips.

 

Another favorite was the Butternut Squash and Spinach Lasagna:

Can you say YUMMY!! Like I said before I don’t have photo abilities or even plating abilities but this meal was another hit!! Even with Little One is is the pickiest eater ever!! At six and a vegetarian it is rough. Even Chief liked it and she isn’t crazy usually about lasagna.

As I said this cookbook is amazing. So simple yet so amazing. This is one cookbook my whole family agreed upon.
